Coconut Rice & Peas
1 16oz can of kidney beans
1 5.5 oz can of coconut milk
2.5 cups white rice
3/4 cup of the liquid from the can of beans
2 cups water
3 sprigs of thyme
1 tsp kosher salt
1/2 tsp fresh cracked black pepper
dash of sugar
wash and drain rice. add all ingredients (except thyme) to a medium sauce pan, stir. place thyme on top of the rice, cover with a super tight lid, and steam for 15-20 minutes on low heat until cooked!
