Pepper Bacon Wrapped Ribeye Steak

3-10 oz. steaks
7 cloves garlic
1/2 small white onion
1/2 small red bell pepper
1 tsp extra virgin olive oil (EVOO)
salt & pepper to taste
1 10 oz package of pepper bacon

Rinse and pat dry your steaks.  sprinkle with salt and pepper on both sides to your taste.

In a food processor, mix the garlic, white onion, bell pepper and olive oil until smooth and creamy. Spread the mixture on the steaks and marinate in the refrigerator for 4 hours. After the time has elapsed, wrap the bacon around the steaks. Hold in place with toothpick. Refrigerate for another 2 hours.  Remove from the refrigerator and let stand for 15 minutes at room temperature while you prepare your grill to high heat.

Remove the toothpicks from the steaks before putting them on the fire.  Remember to only turn once to keep the bacon from unraveling from the steaks.
The best way to tell if your steak is done is to check the internal temperature of the steak with an food thermometer.

For: (measured in degrees fahrenheit)
rare: 140
medium rare: 145
medium: 160
medium well: 165
well: 170
very well: 180

**your meat will continue to cook once removed from the heat so take that into consideration when taking the steaks off the grill**  Enjoy!
